I made this festive and yummy holiday cocktail last weekend, compliments of Southern Living.
The recipe called for vodka, but when I was mixing it up on Sunday I realized I was out. Hmmm...I'm slightly embarrassed to admit that I don't remember finishing it off!?!? Amaretto made a delicious substitution - so good that I have permanently modified my recipe.
Cranberry-Key Lime Punch
Combine 2 cups fresh cranberries, 1 cup sugar and 1 cup water in a saucepan.
Cook over medium heat, stirring occasionally, 8 minutes or until cranberries begin to pop.
Pour mixture through a strainer into a large pitcher. Cool completely.
[I reserved my cranberries to add to the pitcher for festive presentation.]
Stir in 5-6 cups chilled club soda, 1/2 cup key lime juice [I used Nellie & Joe's bottled juice], and 1 cup vodka [I used 1/2 cup amaretto].
Garnish with reserved cranberries and sliced limes.
Serve over ice.
Makes about 7 cups. [I doubled... you can never have too much punch at a party!]
Cranberry-Lime Flavored Water
For the sober ones at the party, I used half of the reserved cranberries plus some lime slices to flavor filtered water. Delish and refreshing!
